Tofu Kebabs

Tofu

  • 1/4 cup tamari
  • 1/4 cup tarragon vinegar
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp fresh or 1 tsp dried basil
  • 1 tbsp fresh or 1 tsp dried thyme
  • 1 tbsp fresh or 1 tsp dried cilantro
  • 2 cloves garlic, crushed
  • 1/8 tsp black pepper
  • 8 oz tofu, cut into 8 cubes OR use tempeh as an alternative
  • 1 red pepper, cut into l/2-inch strips
  • 1 green pepper, cut into 1/2-inch strips
  • 1 medium onion, quartered
  • 1 small zucchini, sliced 1/2-inch thick
  • 1 yellow summer squash, sliced 1/2-inch thick
  • 12 medium mushrooms
  • 8 cherry tomatoes

Coating: Mix first 10 ingredients in medium-size bowl. Set aside.

Serve on a lightly dressed salad.
