Tofu Kebabs

- 1/4 cup tamari
- 1/4 cup tarragon vinegar
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp fresh or 1 tsp dried basil
- 1 tbsp fresh or 1 tsp dried thyme
- 1 tbsp fresh or 1 tsp dried cilantro
- 2 cloves garlic, crushed
- 1/8 tsp black pepper
- 8 oz tofu, cut into 8 cubes OR use tempeh as an alternative
- 1 red pepper, cut into l/2-inch strips
- 1 green pepper, cut into 1/2-inch strips
- 1 medium onion, quartered
- 1 small zucchini, sliced 1/2-inch thick
- 1 yellow summer squash, sliced 1/2-inch thick
- 12 medium mushrooms
- 8 cherry tomatoes
Coating: Mix first 10 ingredients in medium-size bowl. Set aside.
Serve on a lightly dressed salad.
