Minty Edamame Bean Pate

  • 500g Edamame Beans, shelled weight, outer skins removed
  • 1 Garlic clove, crushed
  • 150 ml Extra Virgin Olive oil
  • Pinch ground cumin
  • Small bunch fresh mint, chopped

Defrost, or cook the fresh Edamame beans.

Transfer Soya beans and garlic to a food processor and whiz to a puree, adding a few tablespoons of vegetable stock to give a soft consistency.

Transfer the purée to a bowl, and then stir in the oil, cumin and mint. Season generously.

Set aside for 30 min to allow the flavours time to develop.
